A Simple Summer Happy Hour on the Patio

Three easy recipes, a 30-minute prep plan, and a few pretty serving ideas

Reservations are for people who enjoy putting on real shoes. On a summer evening, Johnny B and I are perfectly happy with a cold drink, a few appetizers, and a little music on the patio. Sometimes we drag the neighbors over too, and just like that, it's a night out — minus the driving home part.

The Menu (Short and Sweet, Like Happy Hour)

There's a theme hiding in this menu, and it's not just 'easy.' Lemon shows up in all three recipes — a twist in the spritz, a bit of zest in the olives, a splash of brightness in the shrimp. I didn't plan it that way. I just really like lemon. But it does make the menu feel more intentional and cohesive.

Little Italy Spritz

Inspired by our recent escape the heat trip to San Diego’s Little Italy, this bright spritz combines limoncello, prosecco, and a splash of S. Pellegrino sparkling water.

Serve it over ice with fresh mint and a lemon twist.

For a small gathering, make a pitcher batch by multiplying the ingredients. Add the prosecco and S. Pelegrino just before serving, stir gently, and pour over ice.

  • Italian Marinated Olives - Briny • Herby • Make-Ahead

Mixed olives are warmed with olive oil, garlic, citrus zest, fresh herbs, and a pinch of red pepper flakes.

They take only a few minutes to prepare and are even better after resting for an hour or two.

Serve them with toothpicks and a few pieces of crusty bread or crostini. Be sure to save some of the citrusy herb oil for dipping.

Set the Patio Table Early

One of my favorite ways to make entertaining feel more manageable is to set the table early.

Before I begin cooking, I put out the appetizer plates, glasses, napkins, and candles. It takes only a few minutes, but it makes the patio feel ready—and gives me one less thing to think about later.

For this happy hour, I kept the table simple:

  • Small appetizer plates for the shrimp, olives, and bread

  • Stemless outdoor glasses for the Little Italy Spritz

  • Linen napkins (I know, Johnny B doesn’t get it either, but linen napkins really make me happy)

  • A large tray for carrying everything outside

  • Candles or battery-operated lanterns for the table

You do not need a full tablescape. A few useful pieces, soft lighting, and something good to serve are plenty.

Johnny B's Job (Self-Appointed)

Johnny B has a very important role in happy hour prep: staying out of the kitchen.

He's not banned, exactly. He's just... redirected.

While I handle the stove, Johnny B wipes down the patio table like it owes him money, gets the speaker paired and the playlist going, and lights every candle within reach — including ones that are purely decorative and have never once been lit before.

Then, right as everything's ready, he appears in the kitchen for "quality control," which is Johnny B speak for sampling the Shrimp Sambuca directly out of the pan before it makes it to a plate.

It works out. The patio's ready, the music's on, and dinner's one shrimp lighter than planned.

Some things never change. And I wouldn't have it any other way.

What Can Be Made Ahead?

A little preparation makes the final half hour much easier.

  • Make the marinated olives and refrigerate them until about 30 minutes before serving.

  • Slice the bread and place it on the baking sheet.

  • Clean and prepare the shrimp.

  • Measure, dice, chop the remaining Shrimp Sambuca ingredients.

  • Chill the limoncello, prosecco, and S. Pelegrino.

  • Wash the mint and prepare the lemon twists.

  • Set out the plates, glasses, napkins, and candles.

A quick shrimp-prep tip: This is my least favorite part, but they are easiest to peel and devein while they are still slightly frozen and firm. Remove the shells and gently lift out the dark vein along the back. Ew. You’ll be glad when that’s done.

Keep the cleaned shrimp refrigerated until cooking.

The 30-Minute Patio Happy-Hour Plan

With the table set and most of the food prepared, the final half hour is simple.

30 Minutes Before

  • Give the marinated olives a stir before setting them out, so the oil and herbs coat everything evenly.

  • Arrange the bread or crostini on the baking sheet

  • Place the Shrimp Sambuca ingredients near the stove.

  • Gather the spritz ingredients and garnishes.

15 Minutes Before

  • Preheat the oven for the crostini.

  • Fill the ice bucket.

  • Start the music.

  • Light the candles

  • Place serving utensils and toothpicks on the table.

Just Before Serving

  • Put the bread in the oven - set a timer for 3-4 minutes

  • Cook the Shrimp Sambuca.

  • Fill the glasses with ice.

  • Pour the Little Italy Spritzes.

  • Garnish each drink with mint and lemon.

  • Carry the food outside on the serving tray.

Final Thoughts

A patio happy hour doesn't ask much of you.

A few easy recipes, a little lemon running through all of them, and some background music that makes you want to get up and dance.

For me, that's the whole appeal — nothing fussy, nothing that requires lipstick or earrings, just a cold drink, good food, and the two of us outside enjoying the evening.
